Olivia is the course coordinator for the Bachelor of Human Nutrition and combined degree programs. She is an Accredited Practising Dietitian (APD) and is an active member of the Nutrition Society of Australia (NSA) - Adelaide branch.

The NSA represents a group of qualified, practising scientists and educators from diverse disciplines who are brought together by a common interest in the research and application of nutrition. The local NSA committee is active in maintaining regular professional development and networking events for nutrition professionals and students.

Olivia's teaching interests are broad covering a range of topics, with particular interest in nutrition and chronic disease management, healthy ageing and food service. In addition Olivia is currently leading the development of a new interprofessional student led clinic model, for adults with chronic conditions or risk factors.

Olivia has completed a mixed methods PhD and is now pursuing research interests in developing interprofessional education and practice, and the use of lived experience in allied health curriculum.
